Easy breakfast casseroles

If you are having company or holiday coming up and you don’t want to think about breakfast, check out these ideas for casserole! Assemble your ingredients the night before and just pop them in the oven when you wake up. BAM! Breakfast made simple.

We like simple.

Bacon and Potato Bake

Melissa from Girly Mama had me at “Bacon and Potato Bake“. Seriously, everything about this casserole sounds delicious. A sure winner if you ask me!

Emeril Lagasse’s Breakfast Casserole with Broccoli, Ham, and Cheese

OH the sweet french bread! Party Blueprints offers this amazing casserole that might make you too full to eat that holiday meal you are slaving over. Pass the fork.

French Toast Casserole

Julie from the Julieverse is speaking my language with her French Toast casserole. I am always trying to perfect my style and I can’t wait to try this version! She also gives instructions to make it Gluten Free if desired.

Eggnog, Vanilla Almond & Cranberry Bread Pudding

If you know me, you know that I have cranberries running through my veins during nearly the entire months of November and December. I can’t. get. enough. This bread pudding recipe from Savoring the Thyme looks flat out ridiculous. I want to eat it for the rest of my days. (Check out this post for a bonus cranberry recipe!)

Cheese Strata

I felt like Will Ferrell in Elf when I read this recipe from Jo-Lynne at Musings of  Housewife. What’s a CHEESE STRATA!? I WANT ONE! I really do. Want one. Like now.

The trick now will be deciding which one to make for Thanksgiving morning this year. Of course, Jerry will be enjoying a 4 day weekend, so maybe we should just make them all!
